1-cup pomegranate juice? cup honey6 cloves garlic, crushed 3 Cornish chickens, split in halfSalt to tasteGarnish ? cup pomegranate seeds3 Tablespoons honeyChopped walnutsMix pomegranate juice, ? cup of honey and the rest of the ingredients and pour over the chickens. Cover, refrigerate, and marinate for at least 8 hours. If possible, turn the chickens from time to time. Preheat your oven to 450 degrees Fahrenheit. While it is preheating, pour the sauce from the chickens into a small pot. Cover the pot and simmer the sauce for 10 minutes. Set aside. Season chickens with salt and pepper. Bake at 450 degrees Fahrenheit for about 25 minutes, basting with the sauce periodically. The chicken should be firm when done cooking. Take out of oven & let it cool (covered) for 5 minutes. Brush each chicken with a ? tablespoon honey. Garnish with pomegranate seeds and walnuts. Pomegranate Martini 2 oz citrus vodka1/2 oz freshly squeezed lemon juice1/4 oz fresh or bottled pomegranate juice1 oz simple syrupPour all ingredients into a shaker with ice. Shake very well and strain into a martini glass (preferably a chilled glass). Garnish your pomegranate martini and you?re all set! Pomegranate Cake 3 cups flour1-teaspoon baking powder2 eggs? cup sugar1-cup pomegranate juiceConfectionary sugarPreheat oven to 350 degrees Fahrenheit. Mix the flour and baking powder in a bowl. In a separate bowl, mix the eggs and the sugar and beat the mixture until it has a stiff consistency. To this mixture, add the dry ingredients (flour and baking powder) and the pomegranate juice alternately. Mix until the ingredients are well blended. Bake for 35-40 minutes or until the top is light brown. Sprinkle the pomegranate cake with confectionary sugar. Slice and serve. Pomegranate Chocolate Frosting ? cup of pomegranate juice2 Tablespoons oil1 6-oz package chocolate chips1-teaspoon vanilla or 1-teaspoon sugar2 cups powdered sugar1-2 Tablespoons waterIn a saucepan, bring the oil and pomegranate juice to a boil. Remove from heat and add chocolate chips; bring to a melt while mixing. Add sugars and water; mix until smooth.
